March 2025
Held at the Cleveland community hall. Twelve homebrewers built their first mash tun and brewed a Southern Pale Ale using local Southern Promise hops.
February 2025
Provided recipe formulation and fermentation temperature profiling for a new mead producer in Stellenbosch. Focused on yeast nutrient schedules and honey sourcing.
January 2025
Brewed a 20-litre dry stout with roasted barley and flaked oats. Fermented at 18°C using Wyeast 1084. Final gravity hit 1.012 — clean, roasty, and sessionable.
December 2024
Analysed six homebrew samples from local club members. Identified diacetyl and acetaldehyde issues — corrected with diacetyl rest and improved oxygen management during transfer.
November 2024
Hands-on demonstration of CIP (clean-in-place) techniques for kegs and fermenters. Covered proper use of peracetic acid and phosphoric acid-based sanitisers.
